Description
Albacore tuna, known in Spain as bonito del norte, is prized for its pale flesh, delicate texture and refined flavour. We catch it exclusively in the Cantabrian Sea during the summer coastal season, using traditional fishing methods designed to help preserve the species and marine life more widely.
The fresh fish arrives at our cannery, where it is cooked and expertly cut to obtain the delicate loins. Our experienced team places each piece carefully into the tin before the loins are pressed and covered with high-quality olive oil.
We recommend allowing some time between the production date and opening the tin, so the olive oil can permeate the tuna and develop its flavour and texture. The shelf life of this product is six years and, much like a good wine, it benefits from time to rest.
Albacore tuna is also highly nutritious: it provides just 138 calories per 100 g and is rich in protein, with no carbohydrates and fats that include polyunsaturated omega-3 fatty acids.
